Cinnabun Protein Pancakes
These cinnamon-swirl pancakes use protein pancake mix and a simple cream cheese glaze. The recipe makes about six small pancakes.

Ingredients
For the pancakes
- 1 cup Kodiak Buttermilk Power Cakes mix
- ¾ cup cold water
- Cooking spray, for the pan
For the cinnamon swirl
- 2 tablespoons packed brown sugar
- ¼ cup unsalted butter, melted
- ¾ teaspoon ground cinnamon
For the cream cheese glaze
- 2 ounces light cream cheese, softened
- ½ cup confectioners’ sugar
- 1–2 tablespoons water, plus more as needed
Directions
- Stir the brown sugar, melted butter, and cinnamon together. Spoon into a small zip-top bag and snip a tiny corner.
- Whisk the cream cheese and confectioners’ sugar together. Add water a tablespoon at a time until the glaze is smooth and pourable.
- Stir the pancake mix and ¾ cup cold water together just until combined; a few lumps are fine.
- Heat a lightly greased skillet over medium heat. Pour about ¼ cup batter per pancake. Pipe a small cinnamon spiral onto each pancake, keeping it away from the edges. When bubbles appear and the underside is golden, flip and cook until the center is set, about 1–2 minutes more.
- Serve warm with the cream cheese glaze.
