Watermelon Mint Salad

INGREDIENTS
1 small seedless watermelon chopped into ½ inch pieces, about 7-8 cups
½ cup mint, thinly sliced
1 tablespoon olive oil
1 small lemon, juiced (or half a large lemon)
Pinch of salt and pepper
3 oz feta cheese, cubed or crumbled
INGREDIENTS
Add all ingredients except feta cheese into a large mixing bowl. Gently mix until combined. Add feta and very gently fold in the feta. Serve immediately.
**Serving Tip**
- Save a few pieces of feta and mint to sprinkle over the top as garnish.
