Instant Pot Pulled BBQ Chicken

Instant Pot Pulled BBQ Chicken

Ingredients

  • 3 lb boneless, skinless chicken thighs
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 2 teaspoons paprika
  • 1 tablespoon avocado oil
  • ½ cup apple juice
  • ½ cup BBQ sauce

Directions

  1. Toss the chicken with the salt, garlic powder, cumin, and paprika.
  2. Select Sauté on the Instant Pot. Add the avocado oil, then brown the chicken in batches for 2–3 minutes per side.
  3. Pour in the apple juice and BBQ sauce, scraping the bottom of the pot to release any browned bits. Seal and pressure cook on High for 6 minutes, then carefully release the pressure according to your cooker’s instructions.
  4. Check the thickest pieces of chicken with a food thermometer; they must reach 165°F. If needed, continue cooking using Sauté until they do. Transfer to a baking dish, shred, and spoon about 1 cup of cooking liquid over the chicken.
  5. Broil for up to 5 minutes for crisp edges, watching closely so the sauce does not burn.
